'garm' va 'sard'

Hello,
i'm on iranian studies at University of Warsaw and i'm working on the subject 'گرم و سرد' ('giarm va sard') in iranian cuisine. Would it be possible to get some basic information about it? Specially about the origin of methods of connecting particular products into a dish.

Dear Etrat,
Could you please advice me for the authentic recipe of shirin polo?
I've done some research, and have found that almost all recipes are actualy two -

I was wondering if you know the recipe for a special fish that the people of tabriz make during norooz (I think it's stuffed with different kinds of herbs). No rush, but if and when you get the chance, I'd appreciate it.

Local Recipe for a Fish Dish
Dear Haji Khanoom,

Most areas in Iran cook the fish in the same way. What really defers is the kind of fish, whatever id available locally is used.
So, I suugest you look at this recipe:
Mahi ba Sabzi - Stuffed Red Snapper

And here are two more fish recipe for you to enjoy:
Mahi Sefid - Fried White Fish (Iranian Style).

Mahi Azad - Salmon

Drink recipe from Iran

Hello
We are a group of 6 Portuguese that monthly prepare a lunch of a certain country. In February we will make an Iran lunch but we still need a drink, that I couldn't find in the internet.
